This is a traditional Italian, cold soup.
This soup is traditionally prepared in two stages.
First you need to prepare the actual soup yourself, to which we will then add chopped vegetables.
- 20ml white wine vinegar
- 60ml olive oil
- 300gr chopped fresh pepper
- 120gr fresh cucumber without seeds
- 3gr chili
- 150gr apple, cored and skinned.
- 15gr sea salt
- 5gr black pepper
- 550gr skinless tomatoes
All these ingredients need to be chopped and put in the blender to make a purée.
Now for the second stage:
- 20gr cherry tomatoes
- 10gr fresh, peeled pepper
- 15gr crab meat
- 20gr fresh cherries
- 25gr fresh cucumber without seeds or skin
- Stick of celery
Finely dice all then tomatoes, pepper, crabmeat, cherries, cucumbers, celery and dill and place in a bowl. Pour the cold soup over the vegetables.
Your gazpacho is ready!
