Ingredients

 

  • 100gr meringue/base
  • 25ml strawberry sauce
  • 40gr strawberry
  • 25gr blueberry
  • Meringue crème with cream
  • Sugar powder (non-melting)
  • Mint

 

For the base

 

  • 400gr Sugar
  • 200gr Egg whites

 

Cooking

 

Heat up egg whites and sugar to 60C in a bowl above the boiling water, stirring constantly.

 

For meringue crème

 

  • 8 Chicken eggs
  • 80gr Cornstarch
  • 20gr Flour
  • 200gr Sugar
  • 1l Milk
  • 530ml Dairy cream 38%
  • 6 Vanilla beans
  • Vanilla
  • Almond extract

 

Cooking

 

Add all the ingredient to the warm milk. Finely stir with a whisk and boil down for 10 min.

 

Whip cream and add to the crème. Mix until smooth.

 

For strawberry sauce

 

  • 1,5kg Strawberry
  • 70ml Syrup
  • 30ml Lemon fresh
  • 15gr Lemon zest
  • 120ge Sugar
  • Vanilla
  • Almond extract

 

Cooking

 

Bring strawberries, sugar and fresh to the boil and boil until the mass is thick and smooth, add syrup and flavorings.

 

 

Fill pre-baked portioned meringue with crème and chopped berries in sauce. Put on a plate. Decorate with fresh strawberries when serve.
