The recipe of chicken with spicy pumpkin and pomegranate seeds of Nofar restaurant.
Ingredients (for 4 portions):
- Chicken – 800 gr
- Ayran – 4 liters
- Pumpkin – 400 gr
- Butter – 120 gr
- Plant oil – 160 gr
- Honey – 4 tablespoons
- Narsharab – 4 tablespoons
- Cilantro – 4 gr
- Cardamom – 4 gr
- Tarragon – 4 gr
- Pomegranate – 20 gr
- Marinate chicken in ayran with cardamom, cilantro, terragon for 1 day.
- Fry chicken in plant oil adding butter.
- Bake fillet in an oven for 5 minutes at a temperature of 180 degree.
- Cut pumpkin into large pieces, fry in plant oil adding butter. When pumpkin is almost ready, add narsharab and honey. Stew pumpkin and make it caramelized.
- Lay out pumpkin on a plate. Strew with pomegranate seeds and cedar nuts. After that strew it with finely chopped oregano.
- Put cooked chicken fillet atop.
