On February, 17th on Bol’shaya Nikitskaya st. opens restaurant “Severyane” from “Ugolek”, Pinch and Uilliam’s owners – restaurateur Ilya T’utenkov and chef Uilliam Lamberti. Representatives of the place told The Village about it.
Chef of the new place is the best young cook-2015 Georgy Troyan. He graduated from Cordon Bleu cooking school and before “Severyane” has worked at a Moscow restaurant “Brown fox and lazy dog”, and also – at Bystro in Four Seasons Hotel Moscow.
There are marinated salmon with smoked sour cream, beef tartare with fried eggs, scallops with carrot hummus, pastrami in baked pita, duck pate with prunes cream and lamb tongues with beetroot ketchup on the menu. There are also soups in “Severyane” – pumpkin soup with scallops and pike caviar and lamb broth. Amongst entrees there are grilled salmon with poached egg, perch with fennel from the oven, zander from the oven with marinated radish, duck chest with buckwheat and porcini mushrooms, beef tenderloin and pepper, stuffed with bovine tails, and also – a lamb saddle.

For the dessert – fluffy cottage cheese with melted ice-cream of sallowthorn, black pineapple with coconut cream, banana from the oven with spicy ganache, and a baked apple with beer ice-cream.
The team refuses to reveal prices before the opening, but it is known already that average check is 2500 rubles.
Interior is designed by Natalya Belonogova who was also in charge of design in “Ugolek”, Pinch, AQ Kitchen, Madame Wang and Santo Spirito. For the decoration of the space she has chosen dark colors that she diluted with red furniture and flashes of colored dishes.

Initially launch of the place was scheduled on September, 2015, but development and testing of the menu took more time than it was presumed, and that is why final opening was postponed for 5 more months.
