Banana cake




For the pastry:


  • 175gr Powdered sugar
  • 2 Chicken eggs
  • 50gr Almond flour
  • 500gr Flour
  • 300gr Butter
  • Salt
  • Vanilla
  • Almond extract




Sieve flour on the working surface, add powder and almond flour, chop butter into the flour mix with a knife. Then add eggs and a pinch of salt. Knead the dough with your hands and leave it for an hour in the cool place.


Bake at 220-250C (pierce several times before that).


For chocolate ganashe:


  • 400gr Chocolate
  • 900ml Dairy cream 38%




Bring cream to the boil in a stewpot.

Add pre-grated chocolate and wait until it’s melted.

Whip with a blender.


White chocolate ganache:


  • 650gr White chocolate
  • 750gr Dairy cream 38%




Repeat the steps for the chocolate ganache.


For the crème


  • 65gr Sugar powder
  • 1l Dairy cream 38%



Mix cream and sugar powder. Pour the mass into a whipping siphon.


For the cake:


  • 200gr Shortcrust pastry
  • 70ml Chocolate ganache
  • 100ml Condensed milk
  • 2 Bananas
  • 275ml White chocolate ganache
  • 130ml crème
  • Limon fresh


Pour the dark ganache over the pastry, leave until set. Spread with condensed milk evenly. Place bananas and cover with the white ganache. Leave to set. Put whipped cream on top.


The dish is ready.
