Custard sticks with caramel sauce




For custard dough:


  • 360gr Flour
  • 200ml Milk
  • 130gr Butter
  • 5 Chicken eggs
  • 20gr Sugar
  • Salt


For caramel sauce:


  • 500gr Sugar
  • 600ml Dairy cream 38%


Cooking dough


In an enamel bowl boil the milk. Do not remove from heat, add salt, butter, flour, sugar, and stir until smooth. Then remove from heat, cool and constantly stirring add the eggs (one at a time). The crucial point is to prevent any lumps. Place the dough into a pastry bag.


Cooking caramel sauce:


Caramelize sugar, add hot dairy cream and boil until smooth.



Pre-fried custard sticks sprinkle with powdered sugar.

Serve the sauce separately.
