Gazpacho soup


This is a traditional Italian, cold soup.
This soup is traditionally prepared in two stages.

First you need to prepare the actual soup yourself, to which we will then add chopped vegetables.

First stage:

  • 20ml white wine vinegar
  • 60ml olive oil
  • 300gr chopped fresh pepper
  • 120gr fresh cucumber without seeds
  • 3gr chili
  • 150gr apple, cored and skinned.
  • 15gr sea salt
  • 5gr black pepper
  • 550gr skinless tomatoes

All these ingredients need to be chopped and put in the blender to make a purée.

Now for the second stage:

  • 20gr cherry tomatoes
  • 10gr fresh, peeled pepper
  • 15gr crab meat
  • 20gr fresh cherries
  • 25gr fresh cucumber without seeds or skin
  • Stick of celery
  • Dill

Finely dice all then tomatoes, pepper, crabmeat, cherries, cucumbers, celery and dill and place in a bowl. Pour the cold soup over the vegetables.
Your gazpacho is ready!
